Ice Cream Alternative

I'm kind of a health nut now. But ice cream is my downfall. I just can't say no. This smoothie recipe is the next best thing if not better. There is no sugar, but it's super good!

Pour into blender and blend until smooth:
2 c milk
2 eggs
splash of vanilla
6 oz orange juice concentrate
Frozen fruit of your choice (we really like strawberries and mangoes but use whatever) to fill the blender to 6 cups.

That sounds good Melissa. But being the slacker mom I tend to be at times, I stick with this one: frozen bananas, peeled and ready for me in the ziplock bag in the freezer, a couple of teaspoons of peppermint extract, 2-3 tablespoons of spinach (frozen, raw, or leftover steamed - it doesn't matter, and the blender (vitamix) Blend until smooth, top with chocolate chips, call it a day. College is kicking my hiney, and this pick me up works pretty well.

Sounds yummy KelliSue, but the sugar in the chocolate chips is bad for you even if you think the chocolate is okay.

I'm glad you shared though. I could skip the chocolate chips and try the rest. We were enjoying the fruity treat and wondering how we could come up with a minty one and still not use sugar.
